What’s in the Fridge?

This is our Fridge just after the food delivery it’s messy but it’s works!

Planned meals for this week are vegetarian Sunday dinner with Quorn Roast, Spicy Tofu Noodles, Paneer Curry, Griddled Halloumi with Pointy Pepper, Aubergine and Asparagus and Asda Meatfree Kievs with home made chips and beans.

Bank Holiday Breakfast

This real handful of a breakfast sandwich is a great way to get plenty of vegetarian protein whilst using up leftovers from yesterday.

Its a runny fried egg sandwich (we use a ceramic pan so minimal oil is needed) with a slice of leftover Quorn roast, just warmed thru in the pan after the eggs. Also on the sandwich is a leftover roasted green chilli to add spice. We made this sandwiches with fresh white bread rolls and a thin layer of benecol spread.

This sandwich with a cup of tea and a glass of Innocent Smoothie makes a great breakfast in bed when relaxing with the newspapers is the aim!

Uncomplicated Vegetarian Sunday Dinner

A Sunday Dinner is one of the best things about being British and this is as traditional as it gets whilst still being vegetarian.

One of the great things about being Vegetarian is that healthy meals can be made relatively quickly. This meal can be made in 50 minutes with 10 or so minutes preparation before hand (we did the preparation after lunch and then just cooked when we were hungry).

This is …
•Roast Potatoes made by peeling and chopping potatoes into chunks and spraying with a light spray of Crisp n Dry and a large sprinkling of hot paprika powder and cooking in the oven for 30 minutes.
•Quorn Family Roast – cooked to the instructions on the packet and then left to stand in Bisto Vegetable Gravy to keep it juicy.
•Paxo stuffing made with boiled water and then formed into balls before baking in the oven for 20 minutes.
•Baby Carrots and Green Beans blanched lightly for a few minutes in boiling water.
•Aunt Bessie’s 5 Minute Yorkshire puddings; The name says it all for cooking, follow the instructions on the packet if you aren’t sure.
•And a couple of Green Chillies roasted for 15 minutes to add a fiery twist to this traditionally British Meal.

We accompanied this with Becks Alcohol free and Canti Pinot Grigio Rose with lots of ice. …Followed by a totally 80s Desert of Viennetta (just take this out of the freezer 15 minutes before you would like to eat it for best taste and texture) .

Sunday Breakfast

Sunday Morning always seems like the perfect time to relax at home with loved ones and a tasty breakfast.

This is an Asda White Bread Bun (lightly toasted) with 2 Fairburns Medium Eggs and a Quorn Best of British Sausage sliced in half and cooked with the Eggs. This with a cup of tea and a glass of Innocent Smoothie is more than perfect for a Sunday Morning.

Now where’s that newspaper …
